Always cold-pressed, it retains its anti-oxidants unaltered thus making an olive oil that is also very important for good health. The quality of an extra-virgin olive oil depends on how ripe the olives are when they are picked, the picking method used, how the oil is extracted and the speed with which these operations are performed. Because the quality of the raw material is born in the olive grove. The olive oil is obtained from a mix of olive varieties, the fruit of generations of experience , but also from tasting and scientific experimentation. It resists oxidation and rancidity thanks to the high pressure of the pressing process it undergoes. This same process also helps to safeguard the natural vitamins that are so beneficial to our organism.
